How do YOU process all the extra cabbage from your garden so it's something you'd like to eat next year?

I don't grow cabbage because cabbage is not good

I usually just break into people's cars parked on the street, and leave excess vegetables in the passenger seat.

Sometimes I tune the radio station to NPR as well.

I throw cabbages off of overpasses towards lucky motorists below. Giving makes me feel good.

I have some kimchi ramen that I'm looking forward to trying. I don't expect it to be very good, though.

I've fermented peppers for hot sauce, and I've fermented some other vegetables, but I haven't gotten around to trying to make kimchi

(chow chow is a common use for the end-of-harvest scraps of cabbage/peppers/onions)

Chow chow and sauerkraut are all on the list for next season.

This year I grew some napa cabbage from seed to see if I could grow napa cabbage and the answer was: "Yes, I can grow napa cabbage." which is evidenced by the napa cabbage I grew.

The kimchi ramen was so bad. slop.

I hate kimchi so much, and it's all thanks to my roommate freshman year.

I lived in Owen and got paired with this dude from Fayetteville who was an obnoxious slob. His stuff was always filthy, he played his music way too loud all hours, just a nightmare. But the worst of it for me was the kimchi.

Before we moved in, we talked on the phone about who could bring what. I offered to bring a mini-fridge for us. That started out okay, but one day, he brought home kimchi. I'd never heard of it, so he offered me some. He opened up a jar of it cold, and it didn't smell very good to me, so I declined.

From that point on, the fridge always had at a minimum two jars of kimchi in it. You couldn't open the fridge without smelling it, and anything you put in the fridge would pick up the smell, too.

But where things got really bad is he developed a taste for eating the kimchi hot right out of the jar. Every day, he'd take a jar and microwave it, and it made the dorm room smell so fucking putrid. It was nauseating. Can't stand the stuff to this day.
